Keeping things very short and somewhat sweet this week. If you saw my fake coffee table you'd understand why. It looks like a paper factory exploded. No joke. I'd post a photo but don't see the point in further embarrassing myself.
So, this week I wanted to do something light and summery and cut back the mint that has grown into an out of control bush on my windowsill. That seems to be the way these things go lately. The questions "what do you want to drink" and "what needs to be chopped down" are one in the same. Mint and basil are at the top of that list. They're both such stubborn plants, fighting each other to see who can take up the most space. Hence the mojitos. I could make a hundred of these and still have too much mint.
2 oz light rum
.5 oz raspberry liqueur
a handful of mint leaves
half a lime
.5 teaspoon sugar
In a larger glass, muddle sugar, mint, and lime with a dash of soda water. Stir in rum and raspberry liqueur and top with soda water. Garnish with a slice of lime, mint, or even a raspberry. Enjoy!
