five recipes to try this weekend

I have a long list of recipes that I have been meaning to try out and this weekend is as good as any to give (some of) them a go, and at the very least, share them with you. Of course the ones that I do end up trying will be posted here anyway, but that could be a while.

With the Kentucky Derby and Cinco de Mayo in mind, here are five recipes I would love to try this weekend.

Coconut Mojitos
Appropriate for both festivities and they certainly look amazing!

Honey-Lime Sweet Potato, Black Bean and Corn Tacos
Easy, gluten free, and vegan if you skip the cheese!
Recipe found here.

Soft Pretzels
I love a good pretzel but the idea of making them at home always seemed a bit daunting, this recipe erases that fear. These pretzels would serve as a great snack for watching the race!

Honey Parmesan Roasted Brussels Sprouts
My love of brussels sprouts is a bit insane. Needless to say, this recipe sounds so delicious. Though it has little to do with either event, they would make a lovely side dish for brunch or dinner.

Raspberry Lemon Cream Tart
Lemon, raspberries, cream, need I say more? This is definitely my kind of dessert and I cannot to try this recipe. It would be the perfect compliment all those fancy and brightly colored derby hats.

If you'd like to see more of the recipes currently on my list you can find them all hereAnd on that note, enjoy your weekend!
