Recipe: Salmon Burgers

Since I have been thinking about that salmon burger I ate last Friday
non-stop all week, I figured that I should share it.
The recipe has been adapted from Coastal Living.

You will need...
1 lb of salmon, ground
1 egg, lightly beaten
¼ cup heavy cream
chopped shallots
a garlic clove, minced
minced red bell pepper
1 teaspoon dried crushed red pepper
fresh ground black pepper
1 teaspoon lemon zest
¼ cup seasoned breadcrumbs
dash/teaspoon garlic salt
chopped Italian parsley
1 teaspoon olive oil
a roll or bread

How to make it.
Combine salmon and ingredients in a bowl. Mix well.
Add unmeasured items to taste.
I bake them in a glass baking dish, but they can also be done in a skillet.
They cook fast about 5-7 minutes.

On a side note:
You can skip this whole process if you know a good place to buy salmon burgers pre-made.

The fun stuff is the spicy djion mustard and honey dressing.
The trick is mixing in about equal parts, tending to favor honey in the slightest.
If the honey is cold it helps to warm it a bit to make mixing easier.

Top with sliced red onion and arugula, add dressing and enjoy!
This time, I had the salmon burger on brioche,
but feel free to choose whatever roll you prefer.
